Creamy Avocado and Spinach Pasta

8 ounces whole grain pasta (such as whole wheat or brown rice pasta)
2 ripe avocados, peeled and pitted
2 cups fresh spinach leaves
2 cloves garlic, minced
1/4 cup fresh basil leaves
1/4 cup fresh parsley leaves
Juice of 1 lemon
1/4 cup extra virgin olive oil
Salt and pepper to taste
Optional toppings: cherry tomatoes, sliced almonds, grated Parmesan cheese

Cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

In a blender or food processor, combine the avocados, spinach, garlic, basil, parsley, lemon juice, and olive oil. Blend until smooth and creamy. If needed, add a splash of pasta water to thin out the sauce to your desired consistency.

Season the avocado sauce with salt and pepper to taste.

In a large mixing bowl, toss the cooked pasta with the avocado sauce until evenly coated.
