Holiday Fruit Salad

This fruit salad is not only heart-healthy but also provides a variety of vitamins, antioxidants, and fiber. It’s a light and refreshing dessert option that can be enjoyed during the holiday season. For the Salad:

2 cups fresh berries (strawberries, blueberries, raspberries)
1 cup diced mango
1 cup diced pineapple
1 cup seedless grapes, halved
1 kiwi, peeled and sliced
1 cup pomegranate arils

For the Honey-Lime Dressing:
2 tablespoons honey (adjust to taste)
1 tablespoon fresh lime juice
1 teaspoon lime zest
1 tablespoon chopped fresh mint (optional)
Instructions:

Prepare the Fruit: Wash and chop all the fruits as per the ingredient list. Combine them in a large bowl.

Make the Dressing: In a small bowl, whisk together honey, lime juice, lime zest, and chopped mint (if using). Adjust the sweetness with honey according to your preference.

Combine: Pour the honey-lime dressing over the mixed fruits and gently toss to coat evenly.

Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.

Serve: Just before serving, give the fruit salad a final gentle toss. You can garnish with additional mint leaves if desired.

Optional: For an extra crunch, you can sprinkle a tablespoon of chopped nuts (such as almonds or walnuts) on top just before serving. Consider adding a tablespoon of chia seeds for added nutritional benefits.
