  • 1 can (15 ounces) chickpeas (garbanzo beans), rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


  1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  2. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the chickpea mixture and toss gently to coat all ingredients evenly.
  4. If using, sprinkle the crumbled feta cheese over the salad and gently toss again.
  5. Taste and adjust seasoning if needed.
  6. Garnish with fresh parsley if desired.
