Summer Grill Bowls
This delicious recipe comes from Lillie Eats & Tells and we can’t wait to try it! It’s easy, just find a base you like such as grains (rice, quinoa), a simple, grillable protein (chicken, salmon, pork chop), add veggies (corn, black beans, tomatoes, olives), and top it however you like!
INGREDIENTS
1 cup Arugula
Salt and pepper to taste
1/3 cup cooked brown rice
1/2 cup cooked chicken, chopped
1/3 cup grilled bell pepper, chopped
1/3 cup grilled zucchini, chopped
1/3 cup grilled pineapple, chopped
1/4 cup grilled onion, chopped
1/4 cup grilled corn, sliced off the cob
1 1/2 tbsp goat cheese
3 tbsp pesto dressing

DIRECTIONS
1. Slice peppers, pineapple, and onion into large pieces and skewer them (if you want to, otherwise put them in a grill bag). Spray lightly with olive oil or avocado oil and salt and pepper them. Grill over medium heat until they are charred and tender.
2. Grill your chicken over medium heat until it is cooked all the way through (165 degrees). Let it rest and chop.
3. Assemble your bowl by starting with the arugula at the bottom, then your cooked brown rice, then the chicken (or protein of your choice), and then your veggies.
4. Top with goat cheese crumbles and a drizzle of pesto dressing.
